2016 Photo Journal of the Annual Spring Wild Leek and Maple Syrup Festival with 12 Top Toronto Chefs
Yesterday was the Annual Spring Wild Leek and Maple Syrup Festival 2016 at the Stadtlander Eigensinn Farm in Singhampton, which is about 2 hours north of urban Toronto. Eigensinn Farm grows and raise their own vegetable and livestock led by Canadian Chef Michael Stadtlander, with the mission to share his wisdom on locally sourced food. You can read more about Michael's bio here.
The weather was everything but Spring-like. Four hours of driving, at 0.5 degrees celsius, with hail and blizzard, my husband and I arrived feeling much excitement. Everyone was there with one common goal... for the love of food and reconnecting with the earth. Every year, over a dozen chefs from the city's well known culinary scene participate in the event, with each team setting up stalls in the forest, and preparing food on the spot to share a gastronomic experience.
This year's participating chefs were:
Hiro Yoshida – Hiro sushi Steffan Howard – Palais Royale Melanie Dunkelman – Seasons 2 taste Paul Harber – Ravine Chris Sanderson – Wilder and Rose Adam Colquhoun – Oyster Boy Paul Böhmer – Böhmer Justin Courtney – Actinolite Anthony Walsh – Oliver & Bonacini Kevin McKenna – Viemade Resort Leona Nyman – Azzurra Scotty the Butcher – Grey County Meats Anthony Rose – Rose & Sons Co. Jay Scaife – Cafe Bar Pasta Michael Stadtländer – Eigensinn farm
The procession began with sliding down the saturated muddy path into the heart of the forest. A dozen food stations scattered throughout the open pit surrounded by forests of trees. We zig-zagged our way to each stall to sample bite sized servings thoughtfully presented. After two hours of stuffing our face, we left with an eventful and fulfilling experience, feeling quite full.
